Some poeple welcome in the new year with gym memberships and overflowing salad bowls. Others, like me, celebrate by testing new dessert recipes.
I’ve decided that some of the successful receipes I test in 2014 will land here, on my Bakery Tour blog. I will admit in advance that I have a pertty “healthy” addiction to chocolate, so prepare for a slightly biased test selection. Now without further ado…..the first big hit of 2014.

Very rich, but very good. They didn’t last long around here!
1oz cocoa powder
4oz ground almonds
5oz light brown sugar
1 can condensed milk
1tbsnp corn syrup or golden syrup
50g dark or semi-sweet chocolate
pinch of sea salt
Base: Cream butter and sugar until light and fluffy. Mix in flour, cocoa, and almonds. Press into parchment-lined 12 x 8 inch tin and bake at 350 for 15 – 20 mins. Set aside.
Topping: Warm butter, sugar, condensed milk, salt and dark chocolate in a pan on low until sugar dissolves. Bring to a boil, then simmer briskly 6 – 7 mins until thickened slightly. Pour onto base, smooth, and cool for about an hour, then cut into small squares.
